New bakery coming to Chicago’s Uptown.


My brother, Bill, and his partner, Terry, have been hard at work for several months toward opening a new bakery and cheese shop in Chicago’s revitalized Uptown neighborhood (on Wilson, three blocks west of Broadway and the Red Line Wilson stop). They’ve posted scoop on their new website:

Will we have outdoor seating?
Yes!

Will you have coffee?
Indeed we will, we will be serving La Colombe coffee.

Will you offer bread baking classes?
As a matter of fact, we will! Please check back when we get closer to our opening date.

And the million dollar question: What will you be serving?
Well, if we told you everything now, that would ruin the surprise, right? So to give you a sample: Along with our core menu of handmade breads, we will offer between 20 and 30 varieties of cheese, daily sandwich specials, flatbread pizzas, seasonal soups, the best blueberry muffin you’ll ever taste, coffee cakes, rustic fruit tarts and much, much more! We have done quite a bit of research in several neighborhoods to help us discover just what our customers will want. Each neighborhood has proven to be distinctly different and Uptown is no exception.

HINT: Once the construction is done and we start recipe testing, don’t be afraid to knock on the glass and ask for a sample!
