I’m currently exploring recipes for desserts with fewer than five ingredients for an upcoming post on SparkPeople.com. (Tough assignment, no?) With some fresh, local fruit on hand in the fridge, I came up with this super-simple recipe for broiled peaches. For a lovely summer dessert, top the peach halves with vanilla ice cream, or whipped cream, or honey-sweetened ricotta. I’ve enjoyed the fruit with a dollop of plain, nonfat Greek yogurt for a healthy afternoon snack.
sweet broiled peaches
per serving:
1 fully ripe peach, peeled and halved
1 tsp. Turbinado (raw) sugar, or substitute brown sugar
dash of almond extract
Preheat broiler. Place peach halves in a baking dish; sprinkle with almond extract and sugar. Broil 5 minutes, until sugar is caramelized like crème brûlée. Remove from oven and serve topped with ice cream, yogurt, sweetened whipped cream or whatever you like.
