Couscous salad with apples and feta.

I made up this recipe after we had a similar salad at a delightful little bar/cafe in Lucca, Tuscany. Couscous is the ideal base for any kind of salad—and this one has a lovely range of flavors and textures: crisp, sweet apple, salty Feta, briny olive, crunchy almonds. It’s kinda perfect, actually. Grandmother’s blueberry buckle.

I found it in her battered copy of “Betty Crocker’s Picture Cook Book” from 1950 and made several enhancements, notably adding orange zest to the streusel topping. It’s perfect with vanilla ice cream, and nearly as good eaten over the kitchen sink right before bed. Get the recipe on writes4food.com! Continue reading

Around here, we love sheet pan suppers: Pile everything onto a foil-lined rimmed baking sheet, toss with olive oil, salt and pepper, and roast until it’s all tender and browned.
