Sweet and salty appetizer.

When I spotted a box of gorgeous fresh figs in the produce section at The Fresh Market last week, one thing immediately came to mind: grilled figs wrapped in prosciutto. This appetizer recipe could not be any easier, and it’s a wonderful combination: sweet and salty flavors, soft and crunchy textures. These were perfect alongside some marinated Mozzarella, sliced Sopressata and a wedge of Gorgonzola Dolce for a New Year’s Eve antipasti nosh with our dearest friends.


grilled prosciutto-wrapped figs

1/4 pound thinly sliced prosciutto (get the good imported stuff)
8 oz. fresh figs
fresh cracked pepper

Preheat grill. Trim stems and slice figs in half. Slice prosciutto into strips, about 1 1/2 inches wide and 4 to 5 inches long. Wrap each fig half in a slice of prosciutto, pressing firmly to adhere (the natural stickiness of prosciutto is a real help). Place figs, cut side down, on hot grill; cook 2 minutes and then turn and cook 2 minutes on the other side. Serve warm, with a couple of grinds of cracked pepper over the top.
